Cauliflower Rice Tabbouleh 

I’ve always loved this Mediterranean dish — and I wanted to try and see if it would still be good if I swapped the traditional bulger or quinoa with Cauliflower Rice... and it sure was 


Ingredients:

1 head of Cauliflower florets pulsed in food processor until size of rice 

1 can chickpeas drained and rinsed 

1 seedless cucumber diced 

3/4 cup parsley chopped fine 

1/2 cup mint leaves chopped 

2-3 green onions chopped 

3 Roma tomatoes seeded and diced 



Add all ingredients to a bowl and mix well...

Toss with dressing


Dressing:

Juice of two large lemons 

1/4 cup extra virgin olive oil

1 tbsp chopped garlic 

1 tsp salt 

1/4 tsp fresh pepper 


Shake well and toss with salad
